Of all your favorite foods, which one would you find the most difficult to give up completely for the rest of your life?
The answer is very easy. That will be the one of most famous food of my hometown: Hot pot sichuan style.

It’s a very special food which starts during the 80s. I was still a child. My mother would bring me with her to most of her parties, where the adults would eat the hot pot with beer or Chinese sake. Hot pot, as its name, is very spicy and hot. Basically, the hot pot is a pot of spicy soup which you can’t eat it because its will kill you by its hot red peppers and all those spicy flavors. Instead of eat the soup, you cook other food in it, such as vegetables, meats, seafoods and whatever you think you can eat. The soup use to be only spicy flavor, but now there is non-spicy flavor too, for those people who can’t eat too spicy.
A lot of my youth memories are related to the hot pot. My and my friend’s birthday parties, family meetings, with my parents’ friends, with my God parents, holidays, the days I went back to China, and so on. I don’t think I can ever live without the hot pot. I don’t really eat it often, but it is the must have. Luckily for me, that I know how to make it, and there are restaurants who serve it in NY.
One of my dream of going back to home is enjoy the real hot pot with my family and friends.
